When Todd developed a serious gastro-intestinal illness in 2007, a gluten and dairy free diet became a critical part of the treatment necessary to keep it in remission.
As anyone who as a family member with special dietary needs knows it changes the shopping, cooking and eating-out habits of the whole family. His parents, Brent & Jo Williamson, had run several cafes and regularly baked for customers with gluten intolerance. But their son’s love of hotdog's soon made them aware that while there were a lot of baked goods and bakery mixes available, gluten free hotdog's and takeaways were just about non-existent.
This could be a classic case of serendipity as Brent & Jo were in the throes of a new business venture, having just purchased the largest hotdog manufacturing plant in the South Island. It became the Williamson’s mission to restore the classic kiwi experience of sharing a parcel of takeaways to those with Coeliac Disease or gluten intolerance, with the proviso that it had to provide an equivalent, or better, eating experience than ‘regular’ takeaway products.
The original range of battered fish, hotdog's, donuts, meat patties and pineapple rings expanded to include mini hotdog's, fish bites and chicken bites to meet demand from family restaurants and caterers, and Easter sees the roll-out of their ‘gf treets’ range to selected supermarkets and specialist retailers nationally for those who want products on hand at home and for parties.
